Introduction: This gluten-free orange pound cake is the perfect treat for those who love a light, citrusy dessert. With a tender crumb, a burst of orange flavor, and a hint of sweetness, it’s a delightful addition to any afternoon tea or family gathering. The use of almond flour and coconut flour ensures that this cake remains moist and gluten-free, while the tangy orange glaze adds the finishing touch.

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tablespoon baking powder
  • 1/2 cup coconut sugar (or sweetener of your choice)
  • 3 large eggs
  • 1/4 cup fresh orange juice
  • Zest of 1 orange
  • 1/4 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. Line a loaf pan with parchment paper or a loaf liner and set it aside. Preheat the oven to 180°C (356°F).
  2. In a medium-sized bowl, combine the almond flour, coconut flour, baking powder, and salt. Mix well to ensure the dry ingredients are evenly distributed.
  3. In a separate bowl, whisk together the eggs, coconut sugar, orange juice, orange zest, melted coconut oil (or butter), and vanilla extract until smooth and combined.
  4. Add the wet ingredients to the dry ingredients and mix until a smooth batter forms.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean, and the cake is golden brown.
  7. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  8. For an extra touch, drizzle with a simple orange glaze made by mixing powdered sugar with a little orange juice.

Enjoy this light and refreshing gluten-free orange pound cake with a cup of tea or coffee!
