Gluten-Free Banana Bread

Ingredients:

  • 3 ripe bananas (mashed)
  • 2 cups gluten-free all-purpose flour
  • 1/2 cup sugar (or honey)
  • 1/4 cup melted butter or oil
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 tsp baking powder (ensure it’s gluten-free)
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • Optional: 1/2 cup walnuts or chocolate chips

Instructions:

  1. Preheat the Oven: Set your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. Mash the Bananas: In a mixing bowl, mash the ripe bananas until smooth.
  3. Mix Wet Ingredients: In the same bowl, add the eggs, melted butter (or oil), sugar (or honey), and vanilla extract. Mix until well combined.
  4. Add Dry Ingredients: In another bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients and stir until just combined.
  5. Fold in Extras: If you’re using walnuts or chocolate chips, fold them into the batter.
  6. Bake: Pour the batter into your prepared loaf pan. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool: Let the banana bread cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
