Cinnamon Sugar Biscuit Bites

These bite-sized biscuit treats are soft on the inside, crisp and buttery on the outside, and generously coated with cinnamon sugar for a warm, cozy flavor. Using refrigerated biscuit dough keeps the recipe simple and fast, while the vanilla glaze adds a bakery-style finish.
Ingredients
For the Biscuit Bites
1 can refrigerated biscuit dough
4 tablespoons unsalted butter, melted
1/2 cup granulated sugar
1 teaspoon ground cinnamon
Oil for frying or nonstick spray if baking
For the Vanilla Glaze
1 cup powdered sugar
2 to 3 tablespoons milk
1/2 teaspoon vanilla extract
Instructions

  1. Prepare the Cinnamon Sugar
In a small bowl, mix the granulated sugar and ground cinnamon until well combined. Set aside.
  2. Cut the Biscuit Dough
Open the biscuit can and cut each biscuit into small bite-sized pieces. Roll each piece lightly into a ball for a more rounded shape if desired.
  3. Cook the Biscuit Bites
    Frying Method
Heat oil in a deep skillet or saucepan over medium heat. Fry the biscuit pieces in small batches for 1 to 2 minutes per side, or until golden brown and cooked through. Remove and place on paper towels to drain.
    Baking Method
Preheat the oven to 375°F (190°C). Arrange the biscuit pieces on a lightly greased baking sheet or air fryer basket. Bake for 10 to 12 minutes, or until puffed and golden.
  4. Coat with Butter and Cinnamon Sugar
While still warm, brush or toss the biscuit bites with melted butter. Immediately roll them in the cinnamon sugar mixture until fully coated.
  5. Make the Glaze
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add a little more milk if needed for a drizzling consistency.
  6. Finish and Serve
Drizzle the glaze over the warm cinnamon sugar biscuit bites and serve immediately.
    Notes
Refrigerated biscuit dough makes this recipe especially quick and beginner-friendly.
For extra flavor, add a pinch of nutmeg to the cinnamon sugar mixture.
These bites are best served warm for the softest texture and freshest flavor.
If baking instead of frying, brush the pieces with melted butter before coating them in cinnamon sugar.
