Crispy Fish Fingers
Ingredients:
White fish fillets (cod or tilapia) β 400 g | about 14 oz
Salt β 1 tsp | 5 g
Black pepper β Β½ tsp | 2 g
Garlic powder β 1 tsp | 3 g
Paprika β 1 tsp | 3 g
All-purpose flour β Β½ cup | 60 g
Eggs β 2
Milk β 2 tbsp | 30 ml
Breadcrumbs (panko preferred) β 1Β½ cups | 90 g

Instructions:
1. Pat the fish fillets dry with paper towels.
2. In a shallow dish, combine salt, pepper, garlic powder, and paprika.
3. Dredge each fish fillet in the flour mixture, ensuring itβs fully coated.
4. In a separate shallow dish, whisk together the eggs and milk.
5. Dip the floured fish fillet into the egg mixture, allowing excess to drip off.
6. In another shallow dish, place the breadcrumbs.
7. Coat the fish fillet thoroughly with breadcrumbs, pressing gently to adhere.
8. Heat about 1/4 inch of oil in a large skillet over medium heat (350Β°F or 175Β°C).
9. Carefully place the fish fingers in the hot oil, being careful not to overcrowd the skillet. Fry for 3-4 minutes per side, or until golden brown and cooked through.
10. Remove the fish fingers from the skillet and place them on a plate lined with paper towels to drain excess oil.
Tips:
For extra crispy fish fingers, use panko breadcrumbs.
Donβt overcrowd the skillet β fry in batches to maintain oil temperature.
Ensure the fish is cooked through before serving.
To prevent sticking, add a small amount of oil to the skillet before adding the fish fingers.
Variations:
Add herbs to the breadcrumb mixture (e.g., parsley, thyme, oregano).
Mix in grated Parmesan cheese to the breadcrumb mixture.
