These Gluten-Free Chocolate

Ingredients:

  • 1 ½ cups gluten-free all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • ¼ cup white sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 ½ cups semi-sweet chocolate chips (or dairy-free if preferred)
  • 1 cup chopped pecans (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the gluten-free flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and white sugar until smooth and creamy, about 3-5 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry flour mixture to the wet ingredients, mixing until fully incorporated.
  6. Fold in the chocolate chips and chopped pecans (if using).
  7. Scoop tablespoon-sized portions of dough and place them onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown but the centers are still soft.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
