Lemon Cottage Cheese Scones

Ingredients:

  • 1 cup of cottage cheese
  • 1 egg
  • 1 lemon (juice and zest)
  • 2 cups of flour
  • 1/4 cup of sugar
  • 1/2 teaspoon of baking powder
  • A pinch of salt
  • 1/4 cup of butter (cold)
  • 1/2 teaspoon vanilla extract (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Mix dry ingredients: In a bowl, combine the flour, sugar, baking powder, and salt.
  3. Add butter: Cut in the cold butter into the dry mixture using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Add wet ingredients: In a separate bowl, whisk the egg, cottage cheese, lemon juice, lemon zest, and vanilla (if using).
  5. Combine: Add the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix.
  6. Shape the dough: Turn the dough out onto a floured surface and gently knead a few times. Pat the dough into a disc shape, then cut into wedges.
  7. Bake: Place the scones onto a baking sheet lined with parchment paper. Bake for about 15-20 minutes or until golden brown.
  8. Serve: Serve warm with a drizzle of icing or a bit of butter.
